Thai Fish Cakes

This is a great little recipe, that takes very little effort but tastes amazing. A great way to increase your omega 3,

serves 4

time 20 min

Ingredients

500g white fish or snapper

1 tbl spoon of red curry paste

1/2 bunch of coriander

1 tsp fish sauce

1 tsp palm sugar

juice of 1/2 lime

2 egg whites

Sauce ingredients

1/2 teaspoon of freshly grated ginger

juice of 1 lime

1 tbl  fish sauce

2 tbl  of tamari

1 tbl palm sugar

2 tbl of crushed peanuts

Method

blend all ingredients until just combined (don’t over blend as this make the fish cakes rubbery)

add in 2 finely chopped shallots ( just the green stem)

shape them into patties about the size of your palm

fry in 2 tbls of coconut oil for 2 min on each side

drain on paper towel

Method for sauce

add all ingredients to a bowl, whisk

you can adjust the flavours your liking by adding more fish sauce for salty, more palm sugar for sweet, and by adding chopped chillies for heat
