Asian chicken

Asian chicken (gluten free) is a simple recipe that is delicious. Full of goodness and antioxidants it has beta carotene which plays a key role in growth, immune function maintenance of our vision and skin. Vitamin C which is the most important anti-oxidant it protects all our cells from oxidative stress. Iron, which is used for oxygen transport, for good immune system and our cognitive function

 

 

The Ingredients

2 medium carrots

1 medium zucchini

Half a bunch of chopped coriander

½ cup of bok choy

1 cup of bean sprouts

2 boiled eggs(chopped)

1 red chilli (chopped)

One steamed or grilled chicken breast

 

Dressing

2 table spoons of sesame oil

1 teaspoon of fresh grated ginger

Juice from 2 limes

2 teaspoons of tamari

1 teaspoon fish sauce

1 teaspoon of palm sugar

 

Method

I have a spiralizer for my vegetables (available at any large supermarket). I then toss all the above ingredients into a large bowl. I then put all the ingredients for the dressing into a jar and give it a good shake. Pour over just before you eat. You can add some chopped almonds or peanuts on top
