Mushroom Stroganoff and Cauliflower Puree


a great vegetarian low carb meal

mushroom stroganoff and cauliflower puree

makes 4 serves


stroganoff sauce

1 kg of mushrooms (i like to use a mixture of different ones)

2 cloves of minced garlic

1 tbl organic butter

1 cup of milk kefir or sour cream

1/4 cup Worcestershire sauce

salt and pepper

cauliflower puree

1/2 large organic cauliflower

1/4 cup of milk kefir or sour cream

salt and pepper



steam cauliflower until soft.

slice mushrooms( not too thin ), gently saute mushrooms garlic and butter just until mushrooms soften, about 6 minutes. Add Worcestershire sauce, stir in completely then add in milk kefir. Add in salt and pepper to taste.


when cauliflower is soft, add to food processor with milk kefir, blend until smooth about 1 minute. Add salt and pepper to taste.


This easy recipe is great as a substitute for meat, low in carbohydrates, and mushrooms are high in iron, are a great source of selenium and potassium. Mushrooms are also high in B Vitamins and an excellent source of dietary fibre.
