Fermented Oats and Activated Nut Vegan Bars
2 cups of soaked oats
1/4 cup coconut oil
1/4 cup honey
1 cup of activated chopped nuts ( I use almonds and macadamias )
pinch of Himalayan pink salt
1/4 cup dried fruit ( optional)
put honey and coconut oil in a saucepan. Heat until mixture becomes frothy. Add all ingredients together and mix thoroughly. Line baking tray with greaseproof paper, and press in mixture. Bake in the oven for 20 minutes on 180 degrees. allow to cool. put in the fridge for 2 hours. lift out greaseproof, and slice into squares. keep refrigerated. Keeps for 2 weeks if you don’t eat it before then !!
To ferment oats soak in cold water and 1 teaspoon of Himalayan pink salt for 6 hours or more, then drain thoroughly. Spead out over a baking tray and dry out in the oven for 3 hours at 65 degrees. Fermenting oats will remove lectins, which our gut has problems digesting as they have histamines, which trigger allergies. To activate nuts soak in water and 3 teaspoons of salt overnight. Drain thoroughly and place in a dehydrator, or 65-degree oven until dry.
