Baked Egg in Capsicum
This little recipe is so easy and versatile you will want to play around with your own fillings.
hollowed out red capsicum
grated cheese or crumbled feta
salt an pepper to taste
crack eggs into capsicum, add salt and pepper. cover with cheese of your choice and place in oven 180 degrees for 10 minutes. I have used many different fillings such as mushroom and spinach under the egg if using other filling only one egg is needed. This is great for breakfast on the run and can be made the day before as it tastes just as good cold. I hope you enjoy this quick recipe and make your own fillings
